pb oatmeal chocolate chip cookies

Now that's a killer long name for a cookie. It's really random how I bake these cookies. A good friend of mine brought us these amaziiiiing store bought peanut butter chocolate chip cookies. After one, I just wanted another. Knowing all the bad stuff in the store bought ones, I decided it would be better to make my own healthy version of it. There's something about pairing peanut butter and chocolate that just mind-blowing! I love pb & jelly, but with chocolate.. It's a whole new level of yumminess if that would exist.

As the title indicates, I also have oats in this recipe. Very little though. At first, I thought I could find a healthy recipe of these cookies. Unfortunately, these cookies were not meant to be good for you. I disguised it into healthy cookies by adding rolled oats in it. I don't know why, but whenever I think oatmeal, I think healthy, but that's definitely not true. Some of the most decadent desserts can be made with oats.

So how did it turn out? A little on the dry side. Unfortunately, one of my batches ended up being a little overcooked (this might have been the cause). Luckily, the second batch to go in the oven was much better! Thick and chewy, just how I like it. I might have added too much oatmeal to my mix. The only problem for these cookies would be the overpowering taste of those chocochips. I could barely taste poor little PB. :( For those still interested in the recipe, here it is below. I'm sure I did something wrong to have them missing that peanut butter taste (Though they do smell like it, but don't taste it)

PB Oatmeal Chocolate Chip Cookies (PBOCCC)
Yields 2 dozens
1/2 cup butter
1/2 cup Peanut Butter
3/4 cup brown sugar
1 cup AP flour
1 tsp baking soda
1/4 tsp salt
1 egg
1 tsp vanilla
1 3/4 cup chocolate chips
1/2 cup rolled oats

1. Cream butter and sugar together. Add peanut butter and egg.
2. In a separate bowl, sift dry ingredients together.
3. Add dry ingredients into wet mixture.
4. Once well combined, add in chocolate chips and oats.
5. Chill dough for an hour.
6. Bake for 15 minutes at 350F.
